The Resurrection of the Body - "The term 'flesh' refers to man in his state of weakness and mortality. The 'resurrection of the flesh' (the literal formulation of the Apostles' Creed) means not only that the immortal soul will live on after death, but that even our 'mortal body' will come to life again." Catechism of the Catholic Church, 990.

Where is the soul? “the whole soul is in each part of the body, by totality of perfection and of essence, but not by totality of power.” St. Thomas Aquinas, Summa Theologiae, I 76.8.

"Organic substances grow, heal, and self-organize."

Mind-Body Approach - Change the mind by changing the body; this is a “bottom-up” approach to change. A top-down approach starts with thoughts and beliefs.

"I would propose that our bodies are the same as Adam and Eve's before the fall with two exceptions: the loss of the preternatural gifts [..] and the effect of the accumulation of sin in time."

Are health and holiness synonymous?  "No, some elements of health are out of our complete control [...] sometimes God allows damage to happen to draw a greater good out of it."
